Nonfiction that goes deep without reading like a textbook

I am looking for more nonfiction that explains one subject carefully but still reads like a book rather than a course.

I do not mind diagrams, notes or some technical vocabulary. What loses me is when every chapter assumes I am studying for an exam.

Is there a useful name for this middle ground between pop-science overview and actual textbook? I would like books where the author takes time to explain mechanisms, not just tell a series of interesting stories.
