Cooking simple meals when open fires are not allowed

The campsite we're visiting doesn't allow open fires, which rules out the romantic idea of cooking everything over flames. I have a single-burner camping stove and one medium pot. For two nights I'd like meals more interesting than instant noodles but still easy to clean up with limited water. What do you actually cook on a small stove when you don't want a cooler full of perishable ingredients?

Yep. I do fried rice on the second night if I have leftover rice and any veg that can survive the trip.

One thing I like is chili with canned beans and tomatoes. It is not glamorous, but it eats like real food and cleans up fast.

I pack tortillas with peanut butter, bananas, and jam for the first night and save the stove for the second. Not fancy, just less washing.
