Storing a larger bag of beans without losing the good first-week flavor

I bought a larger bag of beans to save money, and the first week tasted wonderful. By the third week the aroma had faded noticeably, despite closing the bag carefully after each use. I'm considering splitting it into small airtight portions and freezing the unopened ones, while keeping a week at room temperature. Does that work well for whole beans, and should I let a frozen portion reach room temperature before opening it?

That’s what I do too, and I portion by week. It’s a little annoying once, then your coffee stops aging all at the same speed.

I’d also avoid repeated opening and closing of the freezer bag. The cycle matters more than people think.

So the main thing is to let it warm before opening? I’ve been worrying about condensation on the beans if I pull them out too fast.
